Banana Gelato

Whip egg yolks until light in color. Mix with milk and sugar. Put this mixture in a double boiler over simmering water. Wisk constantly until it reaches 160 degrees Farenheit (about 10 minutes).

Move pan to cold water to lower temperature. When cool, add vanilla. Cover and put in refrigerator overnight.

The next day, mash bananas with lemon juice. Strain milk mixture into ice cream maker. Add mashed bananas. Run ice cream maker until it stops (about 30 to 45 minutes). Pack in plastic tubs and freeze.

Makes 2 quarts.
